Minimising risks of injury
Slips and trips are a risk in any workplace, but commercial kitchens are at particular risk thanks to the floors often being oily, wet and with food scraps on the floor.
Along with regular cleaning to remove such hazards, drainage can play a real part in reducing the risk of slips. At ACO, we advocate for drainage grates and flooring to have the same slip resistance as differences in ratings cause slip hazards.

Reducing odours and pipe blockages
The wastewater generated by commercial kitchens is rich in fats, oils and grease (FOG) and if discharged down the drain, they can solidify in pipework and cause pipe blockages, undesirable odours and can compromise the hygiene of your kitchen.
To mitigate this risk, grease traps are required for commercial kitchens to clean the wastewater before it enters the sewer system. Depending on the application, you might need an above ground, or below ground grease trap. Grease traps are often overlooked in the design, but can be the difference between a smoothly running kitchen and a smelly one!
